-2 cups fresh strawberries (sliced)
-3 1/8 cups all-purpose flour
-1 Tbs of pure vanilla
-1 tsp sea salt
-2 cups of white sugar (Note: Place a little extra to the side as well.)
-1 Tbs cinnamon
-1 1/4 cups vegetable oil
-1 tsp baking soda
-1 1/4 cups pecans (chopped) (optional)
-4 eggs (beaten)
-flour cooking spray
1st preheat oven to 350 degrees F. Spray 2 9 x 5-inch loaf pans. In a medium sized bowl, place strawberries and sprinkle a little sugar on top and place to the side. In a large bowl, combine flour, sugar, cinnamon, salt & baking soda & mix. Blend oil & eggs into strawberries. Add strawberry mixture to flour mixture & with a spatula and blend all together until all dry ingredients are moistened nicely. Stir in pecans. Add batter to sprayed pans evenly. Place in preheated oven for about 45 to 50 minutes. Test loafs with a knife to make sure raw bread doesn’t appear. Remove when done and let loafs cool for about 15 to 20 minutes. Remove fr
