Blueberry Pound Cake Recipe!


8 ounces unsalted Butter, softened, plus 1 tablespoon for the pan

2 cups Sugar, plus 2 tablespoons for the pan

3 cups Flour (sifted)

1 tsp Baking Powder

1/2 tsp Sea Salt

5 large Eggs

1 tsp pure Vanilla Extract

2 cups fresh Blueberries

Baking Spray

Powdered Sugar (for dusting)

Bundt or Tube Pan


*Heat oven to 325˚F, Coat pan with 1 tablespoon of melted butter and 1 tablespoon of sugar and refrigerate pan until batter is ready. (NOTE: Any remaining dry spots, spray with Baking Spray.)

*Whisk together flour, baking powder, and salt. Set aside.

*Mix the remaining butter & sugar together.

*Add & mix the eggs, one at a time.

*After all 5 eggs are in, add vanilla and beat until creamy.

*Add the flour mixture into the butter mixture & mix on low speed. Do not overbeat.

*Fold Blueberries into batter.

*Pour or scoop into prepared pan.

*Sprinkle a tablespoon of sugar on top.

*Bake for about 1 hour & 15 minutes with a small pan of water for moisture. Then test with a steak knife to see if knife comes out clean.

*Cool for about 15 minutes before flipping & removing cake from pan.

*Dust with Powdered Sugar. *Slice, Plate & Serve!

NOTE: Perfect with Whipped Cream or Ice Cream!
