Strawberry Poundcake Recipe! ­čŹô


  • 2 Sticks of┬áUnsalted Butter (Soften)
  • 2 Cups of Flour
  • 1 1/2 Tsp of Baking Powder
  • 1 Tbsp of Pure Vanilla Extract
  • 1 Cup of Sugar
  • 1/2 Tsp of Salt
  • 5 Eggs
  • 1 1/3 Cups of Fresh Strawberries (Diced)
  • Baking Cooking Spray (made with flour)


Pre-Heat oven to 325°F.  Spray loaf pan with cooking spray. In a medium bowl, combine flour, baking powder & salt.

In a large mixing bowl; mix butter and sugar with a hand mixer until the mix is fluffy.  Beat in eggs, one at a time. Add vanilla and beat until well blended.

Stir in dry ingredients using a wooden spoon or spatula and mix until smooth. Do not over mix and do not use a hand mixer.

Pour batter into the sprayed loaf pan and smooth out the top. Bake for about 1 to 1 1/4 hours or check by sticking the cake with a steak knife to see if it comes out clean. Remove from the oven and let the cake sit for 5 to 10 minutes.  Remove from loaf pan. Cool before  slicing.  Slice, plate & serve. (NOTE: Perfect with tea or coffee.)
